白菜富含维生素C、叶绿素、胡萝卜素、矿物盐等,还含有少量的碳水化合物、蛋白质和膳食纤维。每100克可食部分中含水分94克、蛋白质1.7克、胡萝卜素250微克、维生素C47毫克、钠89毫克。
白菜可烹饪成各种菜肴,也可干制成菜干或者腌渍品。白菜的茎叶均可食用,其中的粗纤维可以促进胃肠蠕动,防治便秘。白菜种籽油中含有芥酸、亚油酸、亚麻酸等,是人体必需的脂肪酸。
